Inspired by bruleé, this truffle features a banana caramel encased in a bittersweet chocolate shell. Bruleé is a classic French technique where sugar is evenly distributed on the surface of an object before placed under a broiler to caramelized the sugar and create a hard crust. We have applied this technique to banana slices before adding them into a caramel to extract the full caramelized banana flavour.
