Inspired by caffé mocha, this truffle features 2 ganaches. The first layer is a bittersweet espresso ganache made from 70% guanaja dark chocolate. The flavour infusion comes from Arabica espresso beans, steeped in cream to release the bold, nutty flavour notes found in both the chocolate and coffee beans. The second layer is made from a creamy milk chocolate ganache to compliment the bittersweet espresso ganache while adding sweetness.
